Lentil Shepherd’s Pie
- 1 cup lentils
- 4 cups vegetable broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tbsp olive oil
- 4-5 large potatoes, peeled and chopped
- 1/4 cup non-dairy milk
- 1 tbsp vegan butter
- Salt and pepper, to taste
- Preheat the oven to 375°F.
- In a large pot, combine the lentils, vegetable broth, onion, garlic, carrots, celery, tomato paste, thyme, rosemary, and olive oil.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the lentils are tender and most of the liquid has been absorbed.
- Meanwhile, boil the potatoes in a separate pot until soft.
- Drain the potatoes and mash with the non-dairy milk, vegan butter, salt, and pepper.
- Transfer the lentil mixture to a baking dish and spread the mashed potatoes on top.
- Bake for 20-25 minutes, or until the potatoes are lightly browned.

If you don’t have vegetable broth on hand, you can use water and a bouillon cube or substitute with chicken or beef broth if you’re not vegan. You can also add some red wine to the lentil mixture for extra depth of flavor.
To make the Roasted Vegetable Quinoa Bowl even easier, you can use frozen pre-chopped veggies instead of roasting fresh ones. Just toss them in a little oil and seasoning and roast in the oven until tender.
