Lentil Shepherd’s Pie


  • 1 cup lentils
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tbsp olive oil
  • 4-5 large potatoes, peeled and chopped
  • 1/4 cup non-dairy milk
  • 1 tbsp vegan butter
  • Salt and pepper, to taste


  1. Preheat the oven to 375°F.
  2. In a large pot, combine the lentils, vegetable broth, onion, garlic, carrots, celery, tomato paste, thyme, rosemary, and olive oil.
  3. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the lentils are tender and most of the liquid has been absorbed.
  4. Meanwhile, boil the potatoes in a separate pot until soft.
  5. Drain the potatoes and mash with the non-dairy milk, vegan butter, salt, and pepper.
  6. Transfer the lentil mixture to a baking dish and spread the mashed potatoes on top.
  7. Bake for 20-25 minutes, or until the potatoes are lightly browned.
